5Excellent knife sharpener  Nov 06, 2009
We've had this knife sharpener for over a year and it works well for us. We've used it to sharpen my set of Henckels knives and Chicago cutlery knives and I am very pleased with the results. It does take some practice to slide the knives smoothly through the sharpener. But that's true of any tool. There's a proper technique that is needed and if that's followed, you will get good results. This is much better than sharpening it manually using a whetstone.

This sharpener really does sharpen knives to perfection. This was the second one that we bought, and is going to be a gift to our son. He was over at our house and was cutting up an onion, and comminted on how sharp our knife was. We decided that this would be a good gift for him and his family.

There is one draw back to the sharpener, however, *** you have to be really carefull with you knives after using the sharpener --- they are that sharp and they will cut you very easly.

I have owned this machine for over fifteen years and it works. It works for those of us that, once in a while, want to bring a knife back to almost brand new sharpness. Even with a top end knife, you won't be able to shave with the results. But unless you want to break out the oil/water and a manual stone, I think this is the best edge a typical home cook can achieve quickly, easily, and safely.

This machine is the reason I have had the same set of knives, Chicago Cutlery, for twelve years. They are not high end knives, but what I could afford at the time. But having this machine handy keeps mine sharper than most other home cooks -- regardless of how much they spent.

The first time you sharpen a particular knife, you replace the original bevel of the knife. This takes some time and grinding and may explain some reviewers' difficulties. But after that, a few swipes once in a while on the third stage is all you need. Rarely a neglected knife may need the second stage first. But unless you are completely replacing the edge on a new or abused knife, you won't need first stage. This is good because it is a real grinder. I can definitely see it consuming a knife over the years if you used the first stage every time. But there is no need to as explained in the instructions.

I would have to say I make no sense of the different models from this company. There seems to be no rhyme or reason with regard to features, performance, or cost. I only know about this model which continues to perform well fifteen years later.

I knew that any powered sharpening system was suspect, however when I received the 110 as a gift I gave it a try. It is such a poor sustitute for an easy hand powered system like the EdgePro. No comparison. The 110 scratched the face of my expensive knives. It produce only a moderately sharp edge. I am now only sharpening with the EdgePro System. Wickedly sharp knives in half the time and no worries about scratching the face of expensive knives. The EdgePro takes less metal and produces an edge that this machine can't touch. Do what you want. I'm sticking with a system that works. EdgePro.
