Great tamale steamer Nov 20, 2009 This is a great utility pan in my kitchen, and a great price from Amazon. Besides making all the usual items like fried chicken, chili and soups, I recently used this to steam frozen tamales. I placed a a few canning jar rings in the bottom of the pan, and rested a Lodge cast iron trivet on top of the rings. I placed water in the pan at a level below the trivet, and then placed the tamales on the the trivet. The cast iron in the pan and the trivet maintained a constant heat, creating perfect steam for perfectly steamed tamamles.

Good cast iron for a good price Nov 02, 2009 If you don't have any cast iron you definitely want to get one, and a dutch oven can substitute for a skillet just fine. It's a little on the small size such that if you cut up a whole chicken you'll have some trouble getting all the pieces to fit, so perhaps invest in a cast iron skillet if you find yourself needing more room. I also recommend that you do not trust the pre-seasoning on this or any other cast iron product and season them yourself. Clean with a cloth in warm soapy water (and then never do this again until you re-season it in a year) and rinse. Coat the pan and lid thoroughly (use your hands to ensure a good even spread) in shortening preferably or canola/peanut oil. Place it upside down in a 350 degree oven for about 20 minutes, then remove it and pour out the excess oil, then back in it goes for another 2 hours. If your cast iron is a nice deep black and slippery to the touch it's properly seasoned. Repeat every year or so.
This pot is sturdy at a good price. However if size is an issue, you may want to invest in something larger.

Perfect for NYT No-Knead Bread Oct 28, 2009 I'd never cooked with cast-iron before buying this pot to bake the NYT No-Knead Bread recipe by Jim Lahey. This pot - and several more Lodge pots - are now among my favorites. Oh, I still love my beautiful Le Creuset, but these pots are perfect in their own right.
These pots come pre-seasoned, so you can start using them right away - perfect for beginners. Last month when I was visiting my son and daughter-in-law we purchased this pot (they were begging me to re-teach them to make The Bread). Sure enough, the bread came out perfectly the first time, and this pot was welcomed to their kitchen.
Perfect for soups, browning meats for stews, roasting meats Lodge Logic Pre-Seasoned 8-Inch Cast-Iron Meat Rack/Trivet, chilis, soups with dumplings, anything that needs a bit of color, and a homey presentation. Just avoid extremely acidic foods that will strip the lovely patina that you've built up.
Lately, I've been giving this pot as a wedding gift to young couples with a copy of the bread recipe. Most of them have enjoyed loaves of this delicious bread and have wondered what the secret is. Well, it's no more complicated than this old-fashioned pot that could very well be handed down to their grandchildren.
BTW, the lid from this dutch oven will fit the Lodge 10-1/4" Skillet Lodge Logic 10-1/4-Inch Pre-Seasoned Skillet which is very convenient. The lid from the small dutch oven Lodge Logic Serving Pot with Iron Cover will fit the 6" skillet Lodge Logic Pre-Seasoned 6-1/2-Inch Skillet , too. Makes for easy storage as well.
